Cashew chicken is no doubt a winner by these metrics.&nbsp;<\/p>\n\n\n\n<p id=\"block-906552f6-bad0-47a9-ba74-fcec21b0e0a1\">The chicken breast is briefly marinated, resulting in juicy, tender bites that are very flavorful. The sauce is made from rich oyster sauce, a touch of vinegar, some soy sauce, some sugar, and tons of aromatics, which combine to make the sauce very fragrant, gingery, and garlicky. Then you finish up the dish with colorful pepper and nutty cashews. Scoop a spoonful with some hot steamed rice. But if you like a richer flavor and texture, boneless, skinless chicken thighs work perfectly, too.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"block-3e0b798e-ddcd-4e90-9dc5-c40f1ea200f9\">Marinating ingredients&nbsp;<\/h3>\n\n\n\n<p id=\"block-5e4964c3-e2bc-432f-bc3f-f17e207d11c2\">This key step takes an extra three minutes but will make such a difference to your dish. Using Shaoxing wine and salt makes the chicken so much more flavorful. The cornstarch protects the chicken from the hot pan so it won\u2019t get overcooked. Not only does it create juicy chicken with less oil, but the finished dish will taste as great as if you had cooked it in a wok. I wrote a lengthy post (<a href=\"https:\/\/omnivorescookbook.com\/wok-vs-stir-fry-pan\/\" target=\"_blank\" rel=\"noreferrer noopener\">wok vs. stir fry pan<\/a>) to explain the reasons behind this. Long story short \u2013 your home stove usually cannot generate enough heat for cooking. Plus, since the cashew chicken sauce contains vinegar, it will unseason a cast iron or carbon steel wok. So a large flat non-stick pan is your next best choice.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"block-9acfcf48-57bc-43e5-97db-84a134c3e668\">Cooking cashew chicken step-by-step<\/h3>\n\n\n\n<p id=\"block-3c36f160-920a-4d35-8c7e-69cd21d955bf\">Make sure you have all the ingredients ready near your stove. Chinese stir fry is a very fast-moving process. Once you heat up the pan, the cooking won\u2019t take more than 4 to 5 minutes.
