For busy weeknights, she\u2019d usually make easy soups that take very little time to put together. For example, <a href=\"https:\/\/omnivorescookbook.com\/chinese-egg-drop-soup\/\" target=\"_blank\" rel=\"noreferrer noopener\">egg drop soup<\/a>, <a href=\"https:\/\/omnivorescookbook.com\/tomato-egg-drop-soup\/\" target=\"_blank\" rel=\"noreferrer noopener\">tomato egg drop soup<\/a>, <a href=\"https:\/\/omnivorescookbook.com\/chinese-corn-soup\/\" target=\"_blank\" rel=\"noreferrer noopener\">corn soup<\/a>, and <a href=\"https:\/\/omnivorescookbook.com\/recipes\/winter-melon-meatball-soup\" target=\"_blank\" rel=\"noreferrer noopener\">winter melon meatball soup<\/a> were some of her go-to recipes.<\/p>\n\n\n\n<p>One of my favorite dishes from her collection of <a href=\"https:\/\/omnivorescookbook.com\/authentic-chinese-soup-recipes\/\">authentic Chinese soup recipes<\/a> is the napa cabbage tofu soup. It takes no time to put together and it tastes super hearty. Since the ingredients in this recipe are extremely simple, it is important to use a high quality chicken broth or bouillon. My personal favorite broth is <a href=\"https:\/\/amzn.to\/3YQGGba\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Kirkland Signature Organic Chicken Broth<\/a>, which you can find at Costco. My other favorite is <a href=\"https:\/\/amzn.to\/3DuOOUO\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Better Than Bouillon Roast Chicken Base<\/a>. To use dried shrimp, soak a few of them in warm water for 10 minutes, then add them to the soup at the beginning. It will infuse a savory seafood flavor to the soup.<\/p>\n\n\n\n<p><a href=\"https:\/\/amzn.to\/3WriRVT\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Miso Paste<\/a> &#8211; If you have miso paste, you can also add a spoonful of it to the chicken base and skip the salt. It adds a rich umami to the soup, and not to mention, it has a ton of nutritional benefits.<\/p>\n\n\n\n<p><a href=\"https:\/\/amzn.to\/3Q3gAxB\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Chicken bouillon powder<\/a> &#8211; If the chicken broth you use is not flavorful enough for your liking, I would add a small amount of chicken bouillon to further enhance the taste.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-vegetable-and-alternatives\">Vegetable and alternatives<\/h3>\n\n\n\n<p>My favorite vegetables are napa cabbage and mushrooms. Both create a great texture in the soup. However, there are many other vegetables that work in this recipe as well. Here are some of my favorite:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Choy sum<\/li>\n\n\n\n<li>Baby bok choy<\/li>\n\n\n\n<li>Bamboo shoots<\/li>\n\n\n\n<li>Regular cabbage<\/li>\n\n\n\n<li>Kale&nbsp;<\/li>\n\n\n\n<li>Celtuce&nbsp;<\/li>\n\n\n\n<li>Spinach (add it at the end)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-options-for-tofu\">Options for tofu<\/h3>\n\n\n\n<p>The recipe below uses soft tofu, which is very quick to cook and has a nice silky texture. You can replace it with firm or medium tofu if you like.<\/p>\n\n\n\n<p>Instead of regular tofu, I also love to use other types of tofu products such as:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/shrsl.com\/3uvop\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Fried tofu puffs<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/shrsl.com\/3uvon\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Yuba sheet<\/a> (cut to strips, add at the end)<\/li>\n\n\n\n<li><a href=\"https:\/\/shrsl.com\/3uvoi\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Yuba <\/a><a href=\"https:\/\/shrsl.com\/3uvoi\" target=\"_blank\" rel=\"noreferrer noopener\">knots<\/a> (add at the beginning of cooking)<\/li>\n\n\n\n<li><a href=\"https:\/\/shrsl.com\/3uvot\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Yuba Sticks<\/a> (add at the beginning of cooking)<\/li>\n<\/ul>\n\n\n\n<p>These tofu products have a fun texture and they absorb flavor better than regular tofu. The broth is infused with a fragrant gingery taste and mildly spicy taste from the white pepper.
