I usually go with Kumamoto, Pacific, or Blue Point oysters.<\/p>\n\n\n\n<p><strong>Do not skip the cornstarch rinse:<\/strong> I always rub cornstarch on the oysters before rinsing to remove grit, shell fragments, and excess slime.<\/p>\n\n\n\n<p><strong>Use enough oil:<\/strong> I use a generous amount of oil in the skillet so the omelet puffs up and gets crispy on the outside.
