They have a medium thickness and a satisfying chew, similar to ramen. Udon and somen noodles work well too.<\/li>\n\n\n\n<li><strong>Rice noodles (gluten-free): <\/strong>For a gluten-free option, I recommend <a href=\"https:\/\/amzn.to\/4ipZYhu\" target=\"_blank\" rel=\"noreferrer noopener\">Thai rice noodles<\/a>, the wide kind used in <a href=\"https:\/\/omnivorescookbook.com\/shrimp-pad-thai\/\" target=\"_blank\" rel=\"noreferrer noopener\">Pad Thai<\/a>. They hold the sauce nicely and have a great texture.<\/li>\n\n\n\n<li><strong>Low-calorie noodles:<\/strong> If you&#8217;re watching calories, try <a href=\"https:\/\/www.sayweee.com\/en\/product\/Shimonita-Shirataki-Yam-Noodle-White\/104354\" target=\"_blank\" rel=\"noreferrer noopener\">shirataki noodles<\/a> or <a href=\"https:\/\/www.sayweee.com\/en\/product\/House-Tofu-Shirataki-Angel-Hair\/101425\" target=\"_blank\" rel=\"noreferrer noopener\">tofu noodles<\/a>. The sauce should taste slightly too salty on its own because once it coats the noodles, the flavor spreads out. <\/li>\n\n\n\n<li>Use warm water, not cold. Cold water makes the peanut butter seize up and turn grainy. Warm water melts into it smoothly and creates a sauce that actually pours.<\/li>\n\n\n\n<li>Rinse your noodles after cooking. I run them under cold water to stop the cooking and wash off the starch. Some nights I eat it plain with just chili crisp on top.
