But back in China, it\u2019s a beloved ingredient for <a href=\"https:\/\/omnivorescookbook.com\/chinese-hot-pot-guide\/\" target=\"_blank\" rel=\"noreferrer noopener\">hot pot<\/a>, <a href=\"https:\/\/omnivorescookbook.com\/ma-la-xiang-guo\/\" target=\"_blank\" rel=\"noreferrer noopener\">dry pot<\/a>, and everyday cooking. Just like you might choose different types of protein or tofu for your bowl or stir fry, Spam, or luncheon meat (\u5348\u9910\u8089), is often offered as one of the proteins that you can add to your dish. These types of rice contain less starch than short grain rice, so the grains separate nicely during stir frying. By \u201cday-old\u201d, it simply means that the rice is not freshly cooked and often refers to leftovers that&#8217;ve been stored in the fridge for a day or two. When stored in the fridge, the rice will start to lose moisture, making the grains dry out a bit. And that\u2019s how you can get the grains to separate nicely and toast until crispy when cooked in the pan.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1800\" src=\"https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2025\/04\/250328_Spam-Fried-Rice_4.jpg\" alt=\"\u5348\u9910\u8089\u7092\u996d\" class=\"wp-image-42300\" srcset=\"https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2025\/04\/250328_Spam-Fried-Rice_4.jpg 1200w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2025\/04\/250328_Spam-Fried-Rice_4-600x900.jpg 600w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2025\/04\/250328_Spam-Fried-Rice_4-768x1152.jpg 768w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2025\/04\/250328_Spam-Fried-Rice_4-1024x1536.jpg 1024w\" sizes=\"auto, (max-width: 768px) calc(100vw - 40px), 728px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-mise-en-place\">Mise en place<\/h3>\n\n\n\n<p>When you\u2019re ready to cook, your table should have:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Mixed sauce: <\/strong>we used Shaoxing wine, soy sauce, oyster sauce, sugar and sesame oil to create a balanced sauce that is savory, nutty and slightly sweet.&nbsp;<\/li>\n\n\n\n<li><strong>Beaten eggs: <\/strong>I love to have a LOT of eggs in my fried rice, so I used four eggs.<\/li>\n\n\n\n<li><strong>Spam: <\/strong>I prefer to use the low-sodium type so my dish won\u2019t end up too salty.<\/li>\n\n\n\n<li><strong>Aromatics (sliced scallion and minced garlic):<\/strong> Fresh aromatics are essential for fragrant rice.<\/li>\n\n\n\n<li><strong>Vegetables (onion, carrot, and peas):<\/strong> I used quite a lot of vegetables in this recipe to counterbalance the intensity of the Spam. I like to scramble the eggs separately and add back later, for a nice tender texture. It also prevents \u201cdyeing\u201d the eggs with sauce, so they keep their yellow color.&nbsp;<\/li>\n\n\n\n<li>Pan fry the Spam until crispy. Be patient and flip the spam to crisp up as many sides as you can. You will thank yourself later. You will keep cooking the rice for a while, so the vegetables will be cooked through later.
