Cook over medium-low heat while mixing, until bubbling, then simmer for 2 minutes. Stir in the butter and turn to low heat. Whisk until just combined. Turn off the heat and add the lime juice. Mix again. Set the sauce aside to cool off for 10 minutes before tossing. Right before serving, pour in half of the sauce and toss to coat evenly. Serve immediately as an appetizer with the remaining sauce on the side and extra lime wedges.
