The dish shares some similarities with <a href=\"https:\/\/omnivorescookbook.com\/hong-kong-pan-fried-pork-chops\/\" target=\"_blank\" rel=\"noreferrer noopener\">Hong Kong pan fried pork chops<\/a>. But this dish uses small pork riblets, deep fried until crispy and finished with a sweet and sour sauce made with vinegar and ketchup. They are about one third the size of a whole rib. If you only have access to a standard slab of ribs, you might be able to ask the butcher to cut the ribs across the bone into two or three sections. Then you can further cut them into individual riblets.&nbsp;<\/p>\n\n\n\n<p>Another method is to use whole ribs. The cooking time and method won\u2019t change. But the ribs might need more oil for deep frying due to their size.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-the-marinating-mixture\">The marinating mixture<\/h3>\n\n\n\n<p>The Shaoxing wine, soy sauce and oyster sauce add a rich umami while eliminating any gamey flavor from the pork. The baking soda helps tenderize the pork and keep it juicy.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-the-sweet-and-sour-sauce\">The sweet and sour sauce<\/h3>\n\n\n\n<p>The sauce uses a mixture of ketchup, soy sauce, vinegar, and sugar for the main flavor profile. It creates a sweet and tangy sauce that\u2019s well balanced with a rich umami. Pan frying simply won\u2019t create a great texture due to the uneven shape of the ribs. I also do not recommend shallow frying because it tends to overcook the pork and make it chewy.<\/p>\n\n\t\t<\/div>\t\t\r\n\t\t\n\n\n<h2 class=\"wp-block-heading\" id=\"h-keys-to-success\">Keys to success<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Use a wok for deep frying.<\/strong> The shape of the wok is perfect for deep frying, so you use a little less oil and have more room to properly fry the food. If a wok is not available, a deep pot works as well.&nbsp;<\/li>\n\n\n\n<li><strong>Keep the frying time short. <\/strong>The total of 3 minutes of cooking time seems like very little for ribs, but after many tests it gave the best result. Because short riblets have thin meat, they take very little time to cook through. If you accidentally overcook the ribs, they become tough immediately.&nbsp;<\/li>\n\n\n\n<li><strong>Use just enough sauce to coat the ribs. <\/strong>This ensures the ribs stay crispy longer. If you use too much sauce, the ribs will soak up a lot of liquid and become soft quickly.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-variations-using-different-cuts-of-pork\">Variations using different cuts of pork<\/h2>\n\n\n\n<p>If you do not have access to short riblets, you can use different cuts of pork for this dish. Here are my favorites:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Thin pork chops<\/strong>: You can use 1\/2\u201d thick boneless pork chops. Gently pound the chop to tenderize it, then slice it into big bite-sized pieces.<\/li>\n\n\n\n<li><strong>Pork slices<\/strong>: Slice pork tenderloin across the grain into 1\/2\u201d (1 cm) pieces, then further slice each piece into 1\/2\u201d (1 cm) strips.&nbsp;<\/li>\n<\/ul>\n\n\n\n<p>If you use either of these cuts as a substitute, you should only use 10 to 12 oz (280 to 350 g) of pork, since these are boneless cuts, unlike pork ribs.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-serve\">How to serve<\/h2>\n\n\n\n<p>Peking ribs are often served as a hot appetizer to start the meal, that\u2019s why this recipe is quite small in size. If you want to serve this dish as a main dish, you can easily double the recipe using the sliding scale in the recipe card. If you want to enjoy the same flavor profile, though, here is a suggestion:<\/p>\n\n\n\n<p>Braise the pork ribs until they are tender. It takes about 1 hour on the stove, 20 minutes in the Instant Pot, or 6 to 7 hours on low in a crockpot. Then coat the pork with a thin layer of cornstarch and pan fry it until the surface turns golden. Follow the rest of the recipe for the sauce. This makes a completely different dish but you will get very tasty ribs.<\/p>\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t<\/div>\r\n\t\t\n\n\t\t<div class=\"togglelist notop nobot\">\r\n\t\t\t\n\n\t\t\t<div class=\"toggleitem\" id=\"faqitem-can-i-make-this-dish-in-advance\">\r\n\t\t\t\t<h3 tabindex=\"0\" role=\"button\" class=\"wp-block-heading\" id=\"h-can-i-make-this-dish-in-advance\">Can I make this dish in advance?<\/h3>\t\t\t\t<div class=\"togglereveal notop nobot\">\r\n\t\t\t\t\t\n\n\n\n<p>Peking ribs is a dish you should serve immediately as soon as it\u2019s cooked, so the ribs still be crispy in the sauce. If you want to prepare the dish in advance, fry the pork only the first time (2 minutes of frying at 350\u00b0F (176\u00b0C). When frying, there is a fine line between perfectly cooked and overcooked ribs, so it\u2019s important not to overcook. On the other hand, pork ribs are a tough cut of meat. Even after deep frying, the pork will somehow remain a little chewy and that\u2019s totally normal.
