If you don\u2019t season it properly, it will taste bitter or extremely plain. If using too little oil, the texture will be mushy and create an awful mouthfeel. He taught me this method quite a long time ago, to prevent the eggplant from absorbing oil.<\/p>\n\n\n\n<p>The method is:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Spread the sliced eggplant on a towel.<\/li>\n\n\n\n<li>Sprinkle Kosher salt on both surfaces of the sliced eggplant.<\/li>\n\n\n\n<li>Allow to rest for 15 minutes.<\/li>\n\n\n\n<li>Rinse the salt off the eggplant and pat each surface dry.<\/li>\n<\/ol>\n\n\n\n<p>The second way is:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Place the eggplant in a large bowl and add water to cover.<\/li>\n\n\n\n<li>Add 1\/4 teaspoon salt, mix well.<\/li>\n\n\n\n<li>Place a pot lid on top to keep the eggplant under water for 15 minutes.<\/li>\n\n\n\n<li>Drain and pat dry<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"594\" src=\"https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_5-1200x594.jpg\" alt=\"How to prepare eggplant for stir frying\" class=\"wp-image-40127\" srcset=\"https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_5-1200x594.jpg 1200w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_5-600x297.jpg 600w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_5-768x380.jpg 768w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_5.jpg 1212w\" sizes=\"auto, (max-width: 768px) calc(100vw - 40px), 728px\" \/><\/figure>\n\n\n\n<p>I personally prefer the second method. Because when soaking the eggplant in the water, it also preserve the white color of the eggplant and prevent it from oxidizing and turning brown. <\/p>\n\n\n\n<p>Once you\u2019ve finished either of the methods above, there is one more step &#8211; after the eggplant is completely dry, sprinkle cornstarch over it and mix by hand, until the eggplant is evenly coated with a thin layer of cornstarch.<\/p>\n\n\n\n<p>Using this method, you can create crispy and nicely charred eggplant on the stovetop in 10 minutes. No need to turn on the oven to get the smoky flavor!<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1798\" src=\"https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_3.jpg\" alt=\"Chinese eggplant in garlic sauce close up\" class=\"wp-image-40125\" srcset=\"https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_3.jpg 1200w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_3-600x900.jpg 600w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_3-768x1151.jpg 768w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_3-1025x1536.jpg 1025w, https:\/\/omnivorescookbook.com\/wp-content\/uploads\/2015\/04\/150405_Chinese-Eggplant-With-Garlic-Sauce_3-270x405.jpg 270w\" sizes=\"auto, (max-width: 768px) calc(100vw - 40px), 728px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-garlic-sauce-ingredients\"><strong>Garlic sauce ingredients <\/strong><\/h2>\n\n\n\n<p>Creating a good sauce is really easy and you only need these ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Light soy sauce<\/strong><\/li>\n\n\n\n<li><strong>Dark soy sauce<\/strong>: dark soy sauce add a beautiful dark brown color to the dish and a hint of caramel taste.<\/li>\n\n\n\n<li><strong>Sugar<\/strong>: the sugar balance out the salty ingredients for a more roundup sauce.<\/li>\n\n\n\n<li><strong>Cornstarch<\/strong>: the cornstarch acts as a thicker to thicken the sauce. <\/li>\n<\/ul>\n\n\n\n<p>Just mix everything together and pour it over the eggplant at the end of cooking.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-mix-en-place\">Mix en place<\/h2>\n\n\n\n<p>It&#8217;s important to have all of your ingredients prepped and ready before starting the stir fry. Your table should have:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Eggplant, sliced, prepared according to either of the two methods listed above, and coated with cornstarch<\/li>\n\n\n\n<li>Mixed sauce<\/li>\n\n\n\n<li>Aromatics, chopped (ginger, garlic)<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-cook-chinese-eggplant-with-garlic-sauce\">How to cook Chinese eggplant with garlic sauce<\/h2>\n\n\n\n<p>1. Pan frying the eggplant until golden on the surface, and the inside has turned tender. Transfer the eggplant to a plate. Add back the eggplant and add the mixed sauce. The sauce will thicken up immediately.
